Thick gazpacho
Salmorejo (o porra)

Vegetarian
Starter

Ingredients
Tomatoes 1 kg
Garlic 1 - 2 cloves
Hard old bread, soaked and sqeezed out (1/3 of a french stick)
Salt
Olive oil
Vinegar

To garnish
Spanish ham cut in small strips
Boiled egg cut in small bits
Olives cut in small bits
   
 
Method

  • Chop tomatoes and garlic and mix with the squeezed out bread

  • Add oil, vinegar and salt

  • Liquidize and pass through the sieve several times if necessary to get rid off the tomato skin and pips

  • Chill in the fridge

  • Garnish before serving


Very refreshing in a hot day.
