Rabbit in garlic sauce
Conejo al ajillo

Main meal

Ingredients
Rabbit cut in small pieces
Garlic 4-5 cloves
Dried red pepper 1
Day old bread (1 french stick)
Vinegar
Oregano
Paprika
Salt & pepper
   
 
Method

  • Fry the rabbit with the dried pepper cut in slices

  • In a pestle & mortar, grind the garlic, oregano & paprika

  • Soak the bread in a little vinegar & water, drain & sqeeze out excess liquid. Add to the pestle & mortar and blend

  • Add to the pan with the rabbit together with a glass of water and cook for 20 mins at least


You may use goat or chicken instead of rabbit
