Noodle & clam casserole
Cazuela de fideos con almejas

Main meal

Ingredients
Potatoes 1/2 kg
Thick short noodles 1/4 kg
Clams (baby clams) 1/4 - 1/2 kg
Tomatoes 150 gr
Onion 1
Olive oil 3 tbl spoons
Paprika 1/2 - 1 teaspoons
Colorant (or turmeric)
Garlic 1 clove at least
Parsley
Optional extras: prawns, monkfish
   
 
Method

  • Peel the potatoes and cut into chunks

  • Put clams in cold water for a while, then wash well

  • Fry the onions, when golden brown add the tomatoes skinned & finely chopped

  • Add paprika and fry for 6-7 mins

  • Add the potatoes & a little garlic, some colorant and a sprig of parsley

  • Add alittle water and the calms

  • Boils for a bit and then add hot water to cover the potatoes

  • Season with salt & pepper and cool slowly for 1/2 hour

  • When the potatoes are nearly cooked, add the noodles and cook for 5-6 mins longer or untill the noodles are ready

  • Leave to stand till the noodles have separated and have some juice remaining


When refering to noodles, we mean "fideos". You you can't find them, egg noodles will do the job. If they are long you might want to cut them to about 3 cm long
