Potato salad
Patatas en ensalada


Potatoes 2 kg
Tomatoes 2 or 3 (preferably soft)
Spring onion 1 (chopped very small)
Olive oil 5 tbl spoons
Vinegar 3 spoons
Parsley finely chopped
Garlic (crushed)
Salt & pepper
Optional extras: Tuna, Black Olives

  • Scrub the potatoes well and cut into cubes

  • Put into cold water, bring to the boil and cook till soft

  • Skin & core the tomatoes and cut into cubes

  • Add the oil, vinegar, spring onions, garlic, parsley, salt & pepper

  • Mix a little and serve

You can make the oil, vinegar, etc. into a dressing and pour over the potatoes, instead of adding them separately.
